Abstract
The capacity for emulsification of vegetable phosphatides such as soya bean lecithin is increased by treatment with aqueous hydrogen peroxide. An example is given.ALSO:Vegetable phosphatides such as soya bean lecithin are refined by treatment with aqueous hydrogen peroxide, the excess whereof is subsequently decomposed or removed. The treatment partially decolourizes the phosphatides, and increases their capacity for emulsification. According to an example, sliced soya beans are extracted with a mixture of 90 parts of benzene with 10 parts of alcohol at 20-30 DEG C. The solvent is removed from the extract by evaporation, waste steam is led into the residue, and the lecithin which separates is freed by centrifuging from much of the associated oil. The resulting mixture of lecithin, oil and water is stirred with 30 per cent aqueous hydrogen peroxide without heating. Subsequently the lecithin is dried by heating under reduced pressure at 80-85 DEG C. for 2-3 hours.
