Abstract
Fruit and vegetables are preserved by treatment with acetaldehyde or its compounds or derivatives which retain the characteristic of aldehyde or yield aldehydes, such as acetal, chloral hydrate, or the bisulphite, sulphoxylate or ammonia compounds of acetaldehyde. Acetaldehyde may be added to the atmosphere surrounding the fruit &c. by opening a cartridge containing acetaldehyde or by strewing adsorbent substances containing acetaldehyde into the storage chamber. The atmosphere may be controlled as to its oxygen, carbon dioxide or water content. Acetaldehyde or its compounds may also be applied in solution or emulsion as washes for the fruit &c. or used to impregnate the wrappings or packing materials.
