Abstract
A process for the preparation of chocolate and cocoa products containing vitamins comprises obtaining cocoa-butter containing vitamins by irradiating ergosterol and then working the vitaminized cocoa-butter into chocolate or cocoa products in known manner. The ergosterol may be dissolved in a solvent, then treated with ultra-violet light, dissolving cocoa-butter in the solvent, and removing the solvent while avoiding oxidation; or the cocoa-butter may be added before the ergosterol is irradiated, or the cocoa-butter itself be used as the solvent for the ergosterol, and the ergosterol solution may be irradiated at any convenient stage before the final products are obtained. The percentage of fat in the cocoa may be diminished before the cocoa-butter p containing vitamins is incorporated. According to the examples (1) Ergosterol is dissolved in alcohol and the solution in these layers is irradiated with ultra-violet light to form vitamins D in solution; this solution is partly evaporated in a current of carbonic acid gas under reduced pressure. Cocoa-butter is then added, the alcohol then completely removed, and the product mixed with roasted and milled cocoa and powdered sugar. The chocolate is then worked into tablets. (2) Vitaminized cocoa-butter, prepared as in Example (1) is milled, when cold, with cocoa-powder, the fat content of which has been reduced by pressure; this mixture is then worked up into cocoa-powder.ALSO:A process for the preparation of chocolate and cocoa products containing vitamins comprises obtaining cocoa-butter containing vitamins by irradiating ergosterol and then working the vitaminized cocoa-butter into chocolate or cocoa products in known manner.
