Emulsions, making. -Fatty materials are formed into emulsions, e.g. margarine. chocolate pulp, or tallow, by whirling in a groove between two cylindrical surfaces revolving in opposite directions with a peripheral velocity of not less than 30 metres per minute, and a very thin layer of material is subjected to high pressure on passing through the very small gap between the cylinders, and constantly removed. The peripheral velocity of the revolving surfaces is usually 70-200 metres per minute, and at 160 metres per minutes and a gap of 0.1 m.m., the material is subjected to 500 kgms. pressure per sq. cm. The thin material is removed by scrapers or by cooler surfaces preferably revolving under high pressure against the cylinders. Several cylinders may be arranged in series, e.g. materials fed at 12 to cylinders 1, 2 are transferred to cylinders 3, 4 of equal or differing peripheral velocities, scrapers 5, 5' removing the product. Cooling or heating agents are introduced into the cylinders, which have hollow shafts and interiors and end flanges 13 or stationary walls. Margarine is thus obtained from its constituents without further treatment, e.g. by feeding the materials at 100 gms. per second at 25‹ C. to cylinders 6, 7, 8 as shown and with respective temperatures 11‹, 9‹, 7‹ C., and a peripheral velocity of about 165 metres per minute. Hydrogenized hard fats so treated become plastic.
