Rolling-machines.-In machines for dividing and kneading dough in which the dough is divided by knives mounted above the kneading plate and the separated portions are kneaded in the knife cells, the kneading plate is formed with a spherical surface having its centre in the lower frame of the machine and is mounted to move about this centre, so that it can be swung aside from the acting position to facilitate discharge of the kneaded dough. Fig. 1 shows the knives 16 and kneading-plate 10, moving about the universal joint 5. The detachable kneading-plate 10 is mounted upon a spring-supported counterweighted shaft 7 passing through the ball-joint. During the swinging movement, the pin 15 cooperates with a fixed cam 16 to depress the shaft and release the plate 10 from the pressing and dividing head 3. In operation, the cake of dough is placed on the member 10, the latter secured to the shaft and then swung into position under the head 3. The member 18 is depressed through the medium of the lever 19 to press and divide the dough, after which the plate 10 is moved bodily in a circular path by means of the handle 11 to knead the divided dough. Finally the shaft 7 is returned to the illustrated position. Fig. 2 shows a modified construction in which the plate 9 is raised and lowered by the linkage 26 - - 30 from the handle 32, and is moved by hand to perform the kneading operation through the medium of the floating lever 36. By adjusting the lever 36 relatively to the slot 39, which also acts as the fulcrum, the kneading movement can be varied. In a further modification the plate 9 is raised by a pedal and moved for kneading by hand-operated toothed gearing.
