A dough-dividing machine is actuated by mechanism in which a worm wheel 13, driven from a motor through a worm and shaft 14, 15, carries on its face a pin 17 with a roller 18 mounted thereon and a cam 19 which has a smaller radius of action than that of the roller 18. At the end of a pressing operation the roller 18 engages the cam edge 11 of a lever arm 101 thus causing the knife assembly to be set in motion by the actuation of the transmission train comprising a shaft 10, a lever 9, a rod 91, a lever 7, a shaft 3, a quadrant 4 and a rack 5. As the roller 18 reaches the end 20 of the lever arm 10<SP>1</SP> the bottom edge of the knife assembly 6 bears on the surface of the plate 27 which carries the dough so that at this instant the knives will have cut through the dough completely. Any lumps of dough which may be lodged under the plate 27 become flattened so that the plate is in its normal position. When the end 20 of the lever arm 10<SP>1</SP> loses contact with the roller 18 the action of the weight 71 is to deflect it into contact with the cam 19 so causing the knife assembly 6 to be slightly raised from the surface of the dough carrier plate 27. It is therefore impossible for the bottom edge of the knife assembly to scrape on the carrier plate 27, so chipping it during the ensuing dough working operation. Continuing its rotation, the worm wheel 13 brings the roller 18 against a cam edge 23 on a lever 22, the movement of which through a rod 25 deflects the lever 10<SP>1</SP> to cause the knife assembly 6 to be retracted to its upper position. A recess 24 in the lever 22 enables the knife assembly to be raised and lowered by hand.
