Preserving eggs.-Eggs are preserved by removing the shells, mixing the remainder or the yolks only with glycerine, and then concentrating the mixture until it has the consistency of a pasty mass. The amount of glycerine added is preferably 2¢-15 per cent, but other proportions may be employed according to the amount of water in the whole egg or yolk. Drying is preferably continued until the mixture contains not more than 40 per cent by weight of moisture. By the addition of an amount of water equal to that removed, the eggs may be reconstituted. In the method described, the eggs or the yolks alone are mixed with about 10 per cent of glycerine in a mixing machine and the mixture poured into shallow trays a. The trays are stacked above one another in a well e and have grooves engaging guides d in the well. The trays have each two raised sides b which space them apart so that dry and preferably warm air can be supplied thereto, recesses f being provided at the sides of the well e to enable the drying air to be passed successively across all the trays in the veil. The air may first be passed through a drying and warming device k. The trays after filling are slid along a table l on to the top tray and are lowered through the well e, for example by a table n actuated by a screw o, at such a rate that on leaving the moisture content of the mixture has been reduced to 25-34 per cent. The bottom tray is removed along table m by temporarilv supporting the second lowest tray a, for example by a bolt or bolts, the tables a being subsequently raised to support the trays again. Doors may be provided in the walls of the well to allow inspection of the trays and agitation of their contents. With small quantities of eggs the mixture may be exposed to dry still air in shallow trays with occasional agitation. At 60‹ F. evaporation takes 2-3 days. Drying may also be effected at a low temperature in vacuo.
