Abstract
A heat recovery unit for a Chinese wok cooker has a stainless steel tube folded within a ring of stainless steel plate to increase rigidity and heat adsorption. Bottom portions of the tube extend outward to avoid trapping food waste and ease cleaning. A water heating system (not illustrated) may have the units connected in parallel, series, or a combination of both; with water heated in the units stored in a hot water cylinder. A pump can recirculate water through a unit again when the unit exit temperature is greater than the cylinder temperature. The unit may be made in two sizes to fit standard water cooled Chinese cookers.

I
Heat Recovery Unit for Chinese wok cookers Chinese cooking using the traditional wok cooker involved the wastage of a large amount of heat. With increasing energy price and environmental cost, the recovery of this otherwise wasted heat would be desirable. This unit was designed to fit inside most of the cooker units found in Chinese takeaways and restaurants. It will reclaim a significant amount of heat which otherwise would have been lost through the chimmy. As most Chinese water cooled cookers were made up of two sizes( normally 266m diameter at the front and 215mm diameter at the back.), two similar units but with different outer diameter were designed.
The larger unit (to fit inside the 266 diameter front roll cooking rings.) comprise of a stainless steel tube folded as shown in the accompanying diagram.
The use of stainless is to facilitate cleaning, durability and avoid rusting. The bottom lips were designed to avoid the trapping and the accumulation of waste food or dirt, The outer stainless steel plate improve the heat absorption of the units and also its rigidity.
The units are connected in series, in parallel or a combination of both. It simply acted like a secondary boiler. Cold water circulating through inside of the pipe were heated up during cooking and were taken to the heat exchange pipe of the hot water cylinder where the domestic hot water were heated up. The outlet water from the heat exchange pipe were re-circulating back to the heat recovery unit via a pump. The running of the pump was controlled by electronic sensors. The pump only runs when the water temperatuse at the exit of the heat recovery unit was greater than the water temperature of the hot water cylinder.
Diagram 1 show the heat recovery unit.
Diagram 2 a standard water cooled wok cookers. The number of rings on the front role and the back role varies.
Diagram 3 show the cross section of the wok cooker with the heat recovery unit fitted.
Claims (4)
- Claims 1. The heat recovery unit( BRU) for fitting into standardChinese wok cooker.The outer diameter of the HRU were designed to fit side the opening of the cooker ring.
- 2. The I-mu according to claim I, are manufactured from stainless steel. It is more heat durable than copper, easier to clean and won't rust.
- 3. The HRU according to claim 1, addition of the stainless steel plate increase the rigidity of the unit and improve the heat absorption efficiency of the unit.
- 4. The HRU according to claim 1, incorporated outward lips. During wok cooking, there were unavoidable dirt, grease and food residuals falling into the ring. The outward lips avoided a collecting surface for these materials, thus making the unit easier to clean.
