Abstract

228,830. Jones, D. W. Kent-, Chitty, C. W., and Woodlands, Ltd. Sept. 12, 1923. Conditioning wheat, flour, &c.-Wheat is treated to improve the gluten strength of the flour prepared therefrom by heating it to a temperature approximately between 120‹ F. and 200‹ F. for a period of time greater than that in which no change occurs but insufficient to render the gluten non-retainable when the flour is submitted to a washing test. The wheat is heated without passage of air therethrough but in an apparatus from which evaporated moisture can escape such as is described in Specification 164,653 having a set of water-jacketed tubes C through which the wheat descends to a chamber F. The time of passage of the wheat through the apparatus is controlled by relatively moving grids E, E<1>, G, G<1> controlled by a funnel-shaped bucket A<3>. A cooling leg K<1> receives the treated grain from an elevator K. The time of treatment varies according to the temperature employed from about 4 days at 120‹ F. to about 2 hours at 155‹ F. The grain may be damped or washed after treatment. Specifications 24129/07, 24425/08, 164,557 and 228,829 are referred to. One Provisional Specification states that the treatment mav be carried out in a closed vessel to prevent evaporation, and may be applied to flour &c., and refers to Specification 115,410.
