Perforating-machines.-To facilitate the maturing of cheese, holes are formed in it by reciprocating needles operated by a hand-lever. Each cheese A rests on flanged rollers B, B<1>, provided with gear wheels meshing with a wheel connected to a ratchet wheel C<3> which is given a step-by-step movement by a pawl C<4> mounted on a rocking frame actuated by the hand lever F<1>. A spring pawl C<6> prevents backward movement of the ratchet wheel. The needles H, which are provided with tapered heads to facilitate fitting and adjustment in the needle bars G<B>, G<c>, are reciprocated by the hand lever F<1> through links F<5>, G<1> and levers F<8>, G<2>. Guides GD, G<E> steady the needles during operation. The bearing rollers B, B<1> may be given an endwise movement to stagger the rows of holes.
