Abstract
An extractor for cleaning smoke and hot exhaust air containing oils and fats emitted during use of a heat-generating cooking appliance (1), and discharging the same from the cooking area into the atmosphere, comprises a ventilation duct (14) connected to an inlet (13) through which fresh air is introduced into the cooking area above the extractor main body (2), a blow duct (15) communicating with the ventilation duct (14) and extending along the free edge(s) of the extractor main body (2) and blowhole(s) (16) through which an air curtain is formed around the heat-generating cooking appliance (1) installed below the extractor (2). <IMAGE>
Description
SPECIFICATION
Improvements in or relating to extractors
This invention relates to improvements in or relating to extractors and, in particular, to an extractorfor extracting and cleaning fumes generated during use of a cooking appliance.
Such extractors are designed to discharge an effective amount of exhaust air which is calculated from the aggregate combustion waste gas, aggregate calorific value and/or other data. In the room where a heat-generating cooking appliance is installed, the following types of ventilation are conven tionallycarried out: intake of air the amount of which is equivalent to that discharged by the extractor, room ventilation necessary for intake and exhaust of air other than that related to the heat-generating cooking equipment, and air conditioning. The heated airfrom the heat-generating cooking equipment can be handled only depending on the air removing capacity of the extractor.However, the air, the amount of which is equivalent to that discharged by the extractor, should be taken into the room where the extractor is installed by means of natural or mechanical ventilation. On the other hand, the cooking personnel who use the heat-generating cooking equipment or work near the equipment are subjected to intense heat radiation emitted by the equipment. This working environment is undesirable from the hygienic point of view.
It is an object of the present invention to enable the provision of an extractor whereby the above disadvantage may be overcome or at least mitigated.
Accordingly, the invention provides an extractor for extracting and cleaning fumes generated during use of a cooking appliance, which extractor comprises means for extracting fumes from the region of a cooking appliance, means for cleaning the fumes, means for discharging the cleaned fumes into the atmosphere and means for introducing clean air into the region of the cooking appliance, wherein the means for introducing clean air into the region of the cooking appliance provides an air curtain which at least partially surrounds the cooking appliance in use.
Thus, the heat-generating cooking equipment can be surrounded with an air curtain from which fresh air necessary for combustion on the equipment and almost equivalent to the amount of air discharged by the extractor is taken. The hot exhaust air containing smoke, oils and fats is completely enveloped within the air curtain and led into the extractor. Atthe same time, cooking personnel are protected from adverse working conditions and their health is maintained because a large amount of fresh air is supplied around the heat-generating cooking equipment from the air curtain. This air curtain is also helpful in obtaining the optimum performance of the extractor.
For a better understanding of the present invention, and to show how the same may be put into effect, reference will now be made, by way of example, to the accompanying drawings, in which:

Figure 2 is a front elevational view of a further extractor in accordance with the invention,

Referring now to the drawings and in particular
Figure 1, an extractor main body 2 is installed immediately above a heat-generating cooking appliance 1, such as a range or fryer, in the cooking area. Smoke and hot exhaust air which contains oils and fats emitted during use of the heat-generating appliance 1 are introduced into the extractor main body 2.
A water-screen filter chamber 3 is provided in a lower portion of the extractor main body 2. A spray nozzle 4 from which detergent solution is sprayed through the rising exhaust air is disposed in the water-screen filter chamber 3. An opening which faces downwards and is easily accessible is formed under the spray nozzle. On this opening a door 5 is mounted. A circuitous passage 9 through which the hot exhaust air ascends is defined between a partition panel 6 mounted behind the opening and a front panel 8 of a reservoir 7 located under the opening. A detachable rotary baffle 10 which rotates rapidly in response to the flow of air is mounted above the screen of detergent solution sprayed from the spray nozzle.The oils and fats contained in the exhaust air and the soot and dust contained in the smoke which ascend through the extractor main body 2 are collected and the water-drops and moisture containing the same are removed by the spray of detergent solution sprayed from the spray nozzle 4 and the rotary baffle 10.
An exhaust flue 12 provided with a damper drive 11 is provided above the rotary baffle 10. The hot exhaust air which has been cleaned and cooled is discharged into the atmosphere through a duct which communicates with the exhaust flue and is provided with a suction fan.
The extractor main body 2 can be wall mounted, as shown in Figure 1 or ceiling mounted, as shown in
Figure 2. The wall mounted type of extractor main body 2 is connected to the wall and fixed in position immediately above the heat-generating appliance 1 which is also installed on the wall. In other cases the extractor main body 2 is suspended from the ceiling.
In particular, an extractorwhich isto be installed in a room where a number of heat-generating appliances are installed together and opposite to one another is connected to the ceiling and fixed in position with bolts and other hardware immediately above the heat-generating cooking equipment 1.A A hanging bolt 17 fastens the extractor main body 2 and a hanging bolt 18 fastens a duct 14, the purpose of which will be described hereinafter.
When the wall mounted type of extractor main body is to be mounted on the wall, it can be mounted with its back connected to the wall and with its right and left sides facing empty space, as shown in
Figure 5. Alternatively, the extractor main body 2 can be installed, as shown in Figure 6, in a corner of the cooking area with its right side brought into close contact with one wall, its left side facing empty space, and its back connected to another wall. Also, the extractor main body 2 can be installed, as shown in Figure 7 and as opposed to the way shown in
Figure 6, in a corner of the cooking area with its left side brought into close contact with one wall, its right side facing empty space, and its back connected to another wall.The extractor main body 2 can be also installed, as shown in Figure 8, in a recess made in the wall which conforms to the shape of the extractor main body so that cooking personnel can gain access only from the front.
When the extractor main body 2 is installed, as shown in Figure 9, at a distance from the wall, a space is left on its four sides so that cooking personnel can freely gain access from all sides to the area where the heat-generating equipment is located.
An air curtain equipment is installed around the extractor main body and comprises a ventilation duct 14which extends horizontally and is connected to several air supply pipes 13 which introduce fresh air above the extractor main body 2. A blow duct 15 which extends along the free edge(s) of the extractor main body 2, as can most clearly be seen in the top plan views, extends vertically and is provided with a blowhole 16 which forms the air curtain A around the heat-generating cooking appliance below. Fresh air is supplied to the ventilation duct 14 and blow duct 15 via the air supply pipe 13 which is connected to a duct having an air blower.
The extractor functions as follows: hot exhaust air is aspirated from the region of the heat-generating appliance 1 and is filtered through the screen of detergent solution sprayed from the spray nozzle 4; waterdrops containing oils and fats or soot and dust are almost completely removed by the rotary baffle 10 which rotates rapidly; and the cleaned exhaust air is discharged into the atmosphere via the exhaust flue 12 and-a duct which is provided with a suction fan. If natural ventilation were provided in the room where the heat-generating equipment 1 is being used, air containing foreign matter, such as dirt and dust, might be introduced from outside during the exhaust operation performed by the extractor main body 2 into the cooking area where a clean atmosphere is necessary. This is undesirable from the hygienic point of view.
In summary, therefore, a ventilation duct 14 is provided around the extractor main body 2 for the purposes of supplying air and connected to a blow duct 15 above the extractor main body 2; fresh air is blown downwards from blowholes 16 of the blow duct 15 so that the air forms a continuously descending air curtain which surrounds the heat-generating cooking equipment below; the hot exhaust air around the heat-generating equipment and the hot exhaust air which contains soot and dust or oils and fats emitted during cooking are more completely drawn into the extractor main body 2 so that the optimum performance of the extractor main body 2 is obtained; and the area surrounding the heatgenerating equipment is no longer an unpleasant working environment In conclusion, this system is conducive to better hygiene in the cuisine and to the health of the cooking personnel.
Claims (7)
1. An extractor for extracting and cleaning fumes generated during use of a cooking appliance, which extractor comprises means for extracting fumes from the region of a cooking appliance, means for cleaning the fumes, means for discharging the cleaned fumes into the atmosphere and means for introducing clean air into the region of the cooking appliance, wherein the means for introducing clean air into the region of the cooking appliance provides an air curtain which at least partially surrounds the cooking appliance in use.
2. An extractor according to Claim 1, wherein the means for cleaning the fumes comprises a spray nozzle for spraying cleaning solution into the path of the fumes and a rotary baffle for recovering cleaning solution from the fumes.
3. An extractor according to Claim 1 or 2, which extractor is mountable on a wall.
4. An extractor according to Claim 1 or 2, which extractor is mountable on a ceiling.
5. An extractor, substantially as hereinbefore described with reference to, and as shown in,
Figures 1 and 3 to 8 of the accompanying drawings.
6. An extractor, substantially as hereinbefore described with reference to, and as shown in,
Figures 2 and 9 of the accompanying drawings.
