Coffee substitutes.-In preparing dry extracts for forming beverages resembling coffee, the liquid extract is sprayed, and the spray heated, preferably by passing it into an air blast heated to 150-250‹ F., to form a fine dry powder. The extracts may be prepared as described in Specification 349/15, or by extracting with water a roasted mixture of a cereal and a saccharin body, such as sugar, molasses, figs, prunes, &c.
