Extracting sugar.-In a forced-circulation diffusion process, such as that described in Specification 2928/04, the juice during forcing is conveyed to the measuring-tank m, and the heaters s can be cut out of the circuit, so that forced circulation can be effected at a temperature up to 112‹ C. and under constant volume, while mashing is performed at below 80‹ C. In the arrangement shown in Fig. 3, a three-way cock r connects pipes 1, 2, 3, so that, during forcing, the juice drawn from the battery by a pump p is passed through the heaters s, the pipe f, the diffuser under treatment, and the pipes 1, 2 to the tank m. For mashing, the cock r is turned to connect the pipes 1, 3, so that the heaters are cut out, and for supplying additional juice to the vat m from the battery, the cock r is turned to connect the pipes 2, 3, the heaters being still out of the circuit. If it is desired to supply the additional juice to the vat m in a hot condition, a two-way cock r and a pipe 4, Fig. 8, are used, so that the juice is passed through the heaters s and the pipes f, 4, 2. A number of valves may be used in place of the cock r.
