Liquids, treating; cells.-Milk and cream are sterilized by currents at high pressure, such as 2000-3000 volts; 1¢ kilowatts are sufficient for treating 10 gallons per hour, using alternating current of 50 periodicity. A small quantity of common salt or other substance facilitating sterilization may be added to the milk. The temperature of the milk should be between 50‹ and 65‹ C. A long column of milk, contained, say, in a straight or bent tube 12 to 20 inches long and of three-eighths of an inch to one inch diameter, separates the electrodes. The milk may pass in succession through two such tubes a, united to three wider vertical tubes b, containing electrodes c which form baffles and are attached to plugs at their upper ends. The lower ends of the electrode tubes b are fitted with screw plugs or taps to allow of emptying. The milk tubes a may be of circular or elongated cross-section.
