Abstract
24,244. Ottesen, A. J. A. Oct. 23. Cooling animal and vegetable substances.-A method of freezing fish and other food commodities by direct treatment with a refrigerating- solution such as brine, consists in cooling an unsaturated solution of the brine to a temperature below the reduced freezing-point of the solution-medium. This solution has a tendency to form ice which is free from the dissolved salt and thereby freezes the food commodities without the superficial absorption of any of the salt.
