Preserving fruit and vegetables; jam.-Fruit and vegetables are preserved by heating them in a vacuum with concentrated preserving- liquor, such as sugar or salt solution, allowing them to cool, and then repeating the treatment with dilute liquor. Solid sugar or salt may be used for the first treatment, and water for the second.
