Preserving milk and cream; milk and cream preparations; fat preparations.-Skimmed milk is dried and packed, and when required for use it is emulsified with water and fat and then treated by homogenizing machinery &c. to avoid sediment. The fat may be cream obtained from the same or other milk and freed from water, melted, purified, and packed. The dried milk may be mixed with ten parts of hot water, or first with two parts of cold water and then eight parts of hot.
