Abstract
13,358. Wingardh, A. E. June 13. Preserving eggs.- Eggs are preserved by treatment with antiseptic substances, such as hydrogen peroxide, or by treatment with air or other gas at 80‹-85‹ C., and are then coated with impermeable material. The apparatus consists of a chamber a provided with perforated partitions d, d', a removable, airtight cover c, cocks e, f, h, i, a gauge k, and a window l. The eggs are piled on the partition d, the partition d' is secured above them, and the air is exhausted from the apparatus. Antiseptic or heated gas is then introduced, and afterwards a coating-solution containing alkaline silicate, alkaline earth saccharates, glue, gelatine, or other suitable materials. The eggs may be dried, after running off the solution, by means of a current of dry air. The apparatus may be provided with a steam jacket or other heating-appliance.
