Abstract

13,866. Bell, E. D. Aug. 2. Food preparations; soups.-Relates to the manufacture of food preparations from nuts and nut-like substances such as pea-nuts. The pea-nuts &c. are blanched, and are passed through rollers or minced or pounded to form a paste. Water or milk containing sodium or potassium carbonate or bicarbonate is added to form a paste, which is either heated by means of a water-bath or treated in a digester under pressure. Cheddar cheese is added, together with milk containing alkali, and the whole is heated and stirred. Butter or other fat and eggs may also be added, and flavouring-substances may be introduced, such as curry powder, parsley, thyme, white pepper, cayenne pepper, nutmeg, &c. The Provisional Specification includes pancreatic ferment, papain, and prepared cereals or legumes among the constituent materials of the food, which may be used in the preparation of soups or as a solid food.
