Abstract

19,187. Simpson, C. H., and Senior, J. Sept. 23. Meat-smoking and like kilns.-Fig. 1 shows a kiln for smoking bacon, ham, fish, &c. The smoke is produced by burning sawdust &c. on shelves e and on the floor c of a chamber a provided with perforated air-supply tubes d. The smoke is drawn by a fan e' down a tube f, and passes along a tube g to chambers b, b<1>, where pipes h distribute it under wire-gauze floors i. The meat is hung in the chambers b, b<1>, as shown. The smoke, after treating the meat, is drawn through openings k, m provided with lids l, n respectively, formed in a tube j which leads it through a water extractor s and a heating-coil t heated by a separate stove, back to the pipef. The chambers are provided with ventilators o, o, q, which can be closed by means of valves p, p, r, when necessary, and with suitable doors and thermometers. The chamber a is preferably formed with two doors separated by a small chamber which prevents the smoke from escaping.
