Chambers; air and gases, controlling temperature, humidity, and direction of flow of; racks.- Fish is dried on racks within an enclosed room connected with a vacuum pump and a dry air supply; the racks are supported on a shaft rotated by a turbine, the boiler of which may supply steam for the operation of the vacuum and air supply pumps. Fig. 1 shows a chamber wherein fish is supported on racks carried by a plate 24 on a vertical shaft rotated by a turbine 25. The chamber is evacuated through a valved pipe 32 by a pump 31. Air is then allowed to enter through a reservoir 41 containing sulphuric acid &c., and valved pipes 44, 36; air may afterwards be forced in under pressure from the reservoir and through the pipe 36 by a pump 38; a valve 46 prevents an excessive rise of pressure in the chamber. A boiler 26 supplies steam to the turbine and to the engines 34, 39 driving the pumps. Fig. 4 shows the rack comprising fixed sections 51 and pivoted sections 52 each formed with projections which grip the fish when the sections are closed together and secured by latches 54.
