Coffee manufacture.-Coffee berries are, before roasting, submitted to the action of moulds or other micro organisms, particularly those existing on coffee berries. A culture may be prepared by washing coffee berries, such as Java berries, with sterile water, cultivating the organisms removed to the water on agar plates, and forming cultures from any or all of the colonies formed on the plates. From Java coffee, a culture of aspergillus ochraceous may be obtained. The berries, which may have been sterilized by treatment with steam or by heating, are sprayed with water or treated with steam to swell and moisten them, mixed with the culture and left in heaps for some days in a closed chamber at a temperature of 25-30‹ C. The berries are then dried and roasted. Alternatively the berries, after being moistened, may be kept under suitable conditions of temperature to propagate the organisms which exist upon them.
