Abstract

1537160 Beverage cloud emulsions POLAK'S FRUTAL WORKS Inc 13 Aug 1976 [15 Aug 1975] 33788/76 Heading C6E A composition for use in preparing flavoured beverages based on natural or artificial flavour extracts comprises an emulsion of an oil which is an essential oil or a water-insoluble vegetable oil, an emulsion stabilizer, a water-soluble emulsifier and water, and the emulsion is characterized in that the emulsion stabilizer is hydrogenated abietic acid or an ester of hydrogenated abietic acid which is present in an amount effective to adjust the specific gravity of the oil phase to approximately that of the continuous aqueous phase. The essential oil may be of citrus and other specified fruits. The preferred emulsifier is gum arabic. The emulsion may be spray-dried. The Example discloses emulsions containing coconut oil, gum arabic, an anti-oxidant mixture of sodium benzoate, citric acid and methyl parahydroxy benzoate, and water including hydrogenated glyceryl triabietate or hydrogenated pentaerythritol abietate as emulsion stabilizer. Unsaturated glyceryl triabietate was used for comparative purposes.
