Abstract

1506677 Reconstitution of frozen bakery foods DCA FOOD INDUSTRIES INC 15 March 1976 [17 March 1975] 10227/76 Heading A2D A process for rapidly reconstituting frozen bakery foods comprises exposing said frozen food to both infra - red and microwave radiation at a total power density in the range 0.1 - 0.92 watts per gm. of food. Preferably, the exposure time is from ¢ - 7 mins. and the ambient exposure temperature in the range of 200‹F - 500‹F. The process may be carried out in the apparatus shown in Fig. 3 in which frozen bakery foods 76 are passed by conveyor 74 into microwave cavity C wherein the foods are subjected to microwave radiation and, from elements 72, infra - red radiation. The apparatus is provided with a vertically movable gate 68 which when the foods are positioned in cavity C and before irradiation is moved downward to close port 70. At the termination of the irradiation, the gate is raised and the reconstituted bakery foods conveyed out of the cavity.
