Abstract

1492106 Ouick setting aqueous dessert compositions GENERAL FOODS CORP 19 May 1975 [10 June 1974] 21349/75 Heading A2B A quick setting gelatin containing dessert is made by dissolving a gelatin dessert composition in hot water, and adding ice, the amount of ice when melted being equal to or less than the amount of low water, both amounts being such that the concentration of gelatin in the dessert is from 1.5-3.0% by wt. Also present in the composition may be a sweetener, an acid, a buffer and an antifoam agent. The gelatin has a Bloom of 100 to 350 grms (AOAC) and is present in an amount of from 9 to 15% by weight of the dessert composition.
