Abstract

1478258 Tenderizing meat by electrical treatment NEW ZEALAND INVENTIONS DEVELOPMENT AUTHORITY 17 July 1975 [18 July 1974] 30075/75 Headings A2D and A2U Meat carcasses are conditioned before freezing thereby preventing both cold and thaw shortening and tenderizing the meat by (a) suspending a freshly slaughtered carcass with an electrical contact 23 at or adjacent the point of suspension; (b) advancing the carcass to contact an electrode 14 remote from the point of suspension and (c) electrically stimulating the carcass by applying a pulsating potential difference between the contact and the electrode to stimulate glycolytic reaction in the muscle of the carcass. In the embodiment shown the sheep carcass is treated whilst it is conveyed along overhead track 11. Clamp 23 which also serves as an electrical contact comprises a fixed bar 24 and a series of clamping bars 25 spring biassed towards it (Fig. 6-not shown). Electrode 14 comprises a series of plates 21 mounted to brush against the carcass (Fig. 5-not shown). Insulated boards 22 help to orientate the carcass and in order to assist in making a satisfactory contact the edge of electrodes 21 is wetted with water from line 20.
