Abstract
Description
The present invention relates to the treatment of carcasses, in particular cattle, by electrical stimulation.
We know that the rapid refrigeration of carcasses, in particular of large bovines, causes contractions in the musculature whose consequences are on the one hand a hardening of the meat after cooking and on the other hand a slowing down of the maturation mechanism which normally allows the tenderization of the meat. This phenomenon is attributed to a too slow lowering of the pH of the muscles then death.
It has already been found that electrical stimulation of muscles and carcasses accelerates the drop in pH
Thus, a method is known according to which high voltage pulses are applied to the carcasses after their evisceration. The advantage of this technique is to ensure effective treatment; indeed, the meat obtained keeps its flavor and its tenderness increases. This method has drawbacks, however. Thus, the high tensic used causes the flesh to burst, so that the meat has a modified appearance. In addition, the treated carcasses have significant bursts which increase wear and cause deterioration of the processing installations.
In view of the aforementioned drawbacks, attempts have been made to treat the carcasses by low-voltage stimulation.
Thus, the published European patent application No. 0 032 110 describes a process according to which electrical pulses circulate in the carcasses with a maximum voltage between 10 and 100 V and preferably of the order of 80
V. This patent further indicates that the treatment must be carried out very shortly after slaughter.
This latter process has the advantage of avoiding the bursting of the flesh and therefore of not modifying the aspect of the meat obtained. In addition, the bleeding is improved, and the use of a low voltage makes it possible to reduce the electrical isolation required. However, this method has the drawback of having only a low efficiency.
Indeed, the meat obtained does not have the flavor and tenderness allowed by the high-voltage treatment. These qualities are improved compared to the total absence of treatment, but in an insufficient manner. In fact, the reduction in the fold obtained by implementing such a process is very small since it does not even seem to reach a pH unit.
In view of the drawbacks of the two aforementioned processes, an attempt has been made to combine these two treatments, that is to say to subject the carcasses to a first low-voltage treatment, facilitating bleeding and somewhat improving the flavor and tenderness, then a second high-voltage treatment essentially intended to improve tenderness and flavor. This combination allows a reduction in carcass bursts but does not eliminate the bursting of the flesh which is practically as important as when using the high voltage process alone. Consequently, this combination of the two known methods combines the drawbacks of the two methods without increasing the advantages.
The invention relates to a method having the advantages of known methods but avoiding most of their disadvantages.
More specifically, the invention relates to a method of treating carcasses by electrical stimulation, intended to be applied to non-skinned carcasses which have undergone bleeding, of the type which comprises bringing electrodes into contact with at least two conductive zones of the carcass, and the application to the electrodes of pulsed electrical signals. According to the invention, the pulsed electrical signals applied to the electrodes have a voltage whose peak value is between 150 and 600 V and preferably between 100 and 500 V, and which can be called "medium voltage".
The successive pulsed signals are preferably in phase opposition. Each signal is advantageously formed of a section of an alternating signal, the duration of each section being slightly greater than half a period.
The frequency of the pulsed signals is advantageously between 5 and 20 Hz, and the utilization coefficient is between 5 and 40%.
A. The intensity of the stimulation current has a maximum value advantageously between 1 and 3 A.
The duration of the electrical stimulation treatment is advantageously between 0.5 and 5 min.
The electrodes are preferably applied one in contact with the nostrils and another in contact with a rear part of the carcass, this second electrode passing through the skin.
The advantages obtained by such a treatment are essentially the obtaining of meat having excellent qualities of flavor and tenderness, without bursting of the flesh. In addition, the carcasses have only weak or zero bursts, and since the voltage used is relatively low, the installations must not include extremely expensive isolation. In addition, the treatment is advantageously carried out just after the bleeding and it is found that it is then greater than in the absence of stimulation.
In an example of an installation intended for implementing the method of the invention, the carcasses are suspended by one or two rear legs, from hooks intended to move along an air conveyor
The carcasses are brought as quickly as possible to a bleeding station where most of the animal's blood is poured into suitable tanks. As soon as most of the blood has dripped from the carcass, it goes to an electrical stimulation station.
This last operation can therefore be carried out just a few minutes after the animals are slaughtered.
Stimulation requires contacting electrodes with at least two conductive areas of the carcass.
In an advantageous embodiment, it is convenient that a first electrode is brought into contact with the nostrils because the latter are wet and give good contact. Obtaining good contact at a second electrode is advantageously ensured by penetration of a pointed electrode through the skin of a posterior part of the animal, for example a hind paw.
The main parameters of the electrical stimulation process are the voltage of the pulsed signals applied, their phase relationship, their frequency, the coefficient of use of the pulsed signals, the intensity of the maximum current transmitted to each signal, and the duration of the treatment of stimulation.
As indicated previously, the voltage of the pulsed signals is a medium voltage whose peak value is between 150 and 600 V, and preferably between 200 and 500 V.
When the stimulation voltage is less than 150 V, the flavor and tenderness of the meat finally obtained is not sufficient, even when the stimulation treatment is prolonged. Indeed, there appears a phenomenon of overstimulation which causes an acceleration of the appearance of the rigor mortis when the process is prolonged unduly at too low voltage. Above 600 V, the meat obtained may present a burst of flesh. In addition, the carcasses then show significant bursts. Furthermore, the flavor and tenderness that can be obtained is not improved.
Of course, these values indicated for the peak voltage used should not be considered very strictly, since the stimulation effect obtained depends on parameters such as the size of the carcasses, the particular nature of the flesh of the carcass, depending especially previous feeding, etc. The values given correspond to large cattle, reared according to modern methods.
Although this characteristic is not essential, the use of successive pulsed signals in phase opposition is advantageous. This phase relationship may however relate only to groups of pulsed signals.
The frequency of the pulsed signals is advantageously between 5 and 20 Hz, and their utilization coefficient between 5 and 40%. These values, which do not constitute absolute limits, give excellent results in the case of large cattle. It is considered that this advantage is due to the fact that the various electrical stimuli are then sufficiently spaced to allow a certain relaxation of the medium between the successive pulsed signals.
In the example of pulsed signals represented in the single figure, the voltage is 400 V, the frequency of approximately 12.5 Hz and the coefficient of use of approximately 30%. Successive signals are in phase opposition.
They are each formed by a section of approximately 12 ms of an alternating signal at 50 Hz, that is to say slightly greater than a half-period.
The duration of the electrical stimulation treatment is advantageously between 0.5 and 5 min. It is noted that, when the stimulation time is too short, the desired effect, namely the improvement of the flavor and tenderness, is not obtained. On the contrary, when the stimulation time exceeds ten minutes, the meat finally obtained does not present any additional improvement. On the other hand, the stimulation installation is immobilized longer, so that such long times are of no interest from an industrial point of view.
When the electrical stimulation is carried out according to the invention, it is found that a significant quantity of blood has finally been recovered, and this additional bleeding must be attributed to the application of the electrical stimulation.
It is also found that it is advantageous that the intensity of the current flowing in the carcasses does not exceed 1 to 3 A, this value being the maximum intensity reached with each pulsed signal. Higher intensities can cause phenomena detrimental to the appearance of the meat ultimately obtained. However, depending on the conditions of attachment of the electrodes, it happens that the first pulsed signals cause the circulation of currents of different intensities, this phenomenon not being harmful insofar as it is limited to a small number of pulsed signals.
Of course, the various parameters indicated above are not independent of each other.
Thus, the use of an increased tension allows a reduction of the treatment time. An increase in the coefficient of use allows a reduction in treatment time. However, when the meat must have an optimal flavor and tenderness, the abovementioned parameters must not significantly depart from the ranges indicated.
It is understood that the invention has only been described and shown as a preferred example and that any technical equivalence may be made in its constituent elements without going beyond its ambit.
