1462175 Compressed rehydratable food product FOSTER D SNELL INC 29 May 1974 [11 July 1973] 33073/73 Heading A2B A food product comprising comminuted meat, fish, fruit or vegetable containing at least 18% by wt. vegetable protein and at least 10% by wt. of a polyhydric alcohol, mono- or di-glyceride is mixed to form a doughy mass which is cooked and dried to a moisture content of 4-8% by wt., compressed to 10-50% of its original volume and dried to a moisture content of not greater than 3% by wt. On admixture with an aqueous liquid the product is restored to its original volume, geometry and structure. A preferred food product comprises beef, glycerol and gluten.
