Abstract

Glucose solutions are used as starting materials for producing syrups containing fructose and glucose by an enzymatic route. The glucose isomerase used is obtained from strains of the genus Bacillus stearothermophilus, deposited with the Centraalbureau voor Schimmelcultures - Baarn (Netherlands), under the number 429. The enzymatic reaction is carried out at temperatures of between 30 and 70 DEG C with a pH of the reaction medium of between 5 and 9. The said microbes are cultured at a temperature of between 45 and 70 DEG C in nutrient media containing xylose and small quantities of Mg<++> and Co<++> ions.
