Rollers or cylinders, hollow.-In rotary cooling apparatus for solidifying emulsions, fatty substances, and the like, a tortuous channel for the cooling-liquid is provided within the working surface of the rotary member, so that the velocity of flow of the cooling-liquid is maintained and the transfer of heat is thereby facilitated. The invention may be applied to cylindrical or conical drums or to plane surfaces. Fig. 2 shows a helical channel 9 within the working surface 6 of a drum 10. The cooling-liquid enters at one end 14 of the axis and leaves at the other end 15. Figs. 4 and 5 show a continuous zigzag passage 9 formed by ribs 8 parallel to the axis of the drum. An inner cylinder 7 is provided in each case, and the ribs forming the channel may extend from either the outer or the inner drum, or partly from each. In the case of a plane rotary surface, a spiral channel is disposed on its lower side.
