Abstract

1443485 Cleaving meat carcases, removing teeth therefrom STATHMOS AB 5 Nov 1974 [8 Nov 1973] 47859/74 Heading A2U A method of treating an animal carcase comprises (a) cutting open the carcase, (b) removing the offal, (c) pulling the carcase, lying on its back, through a cleaving station where it i's sawn centrally through the spine into two halves, (d) separating the two halves, (e) simultaneously tipping the upper part of each half inwardly and the lower part outwardly thereby forcing the spine portion to project and (f) sawing the spine portion from each half. In a suitable apparatus-Fig. 1-a carcase suspended by its hind legs from an overhead conveyor 15 engages at its lower end a trolley 13 and is tipped on to its back by advancement of the conveyor. Rails 20-25 ensure that the carcase arrives on its back on table 11 in correct alignment. The carcase is sawn in half by circular saw 30 and the two halves separated and suitably aligned by two ploughshareshaped members 34 and 35. Two circular saws 31 mounted on arms 32 can be swung upward from an inoperative position below table 11 to. cleave the spine portion from each half. On leaving the apparatus, the two halves are pulled back to a vertical position on the conveyor. If the carcase is to be cleaved with its head on, the front and canine teeth must first be removed using the apparatus shown in Fig. 8. Rocking carriage 50 is biased downwards on the lift by weight 53. When the suspended carcase contacts the carriage, it will be tilted towards the horizontal and the nose of the carcase will contact fixed cutting member 60 which will cooperate with sliding cutting member 59 to remove the teeth.
