Abstract

1418790 Expanded soya product CADBURY Ltd 1 May 1974 [17 April 1973] 18407/ 73 Heading A2Q An edible expanded soyabean product is produced by (a) drying soyabeans, (b) impregnating the dried beans with water, (c) before, during or after the water-impregnation step, removing the hulls and (d) rapidly heating the moistened, dehulled beans to expand them. In a particular embodiment, the dried beans are soaked in boiling water, rolled to split them in two and loosen the hulls, soaked in cold water whereby the hulls are released and float to the surface and flash heated by microwaves or hot fat. The soaking water may include colouring and/or flavouring.
