1403184 Chip frier BLAW-KNOX FOOD & CHEMICAL EQUIPMENT Inc 19 Jan 1972 [21 Jan 1971 25 June 1971] 41170/74 Divided out of 1402311 Heading A4D A method of continuously cooking a comestible comprises introducing the comestible into one end of an elongate cooking zone in which heated oil is dispersed in countercurrent contact with the comestible being introduced thereto. FRYING APPARATUS: A chip frier comprises an elongate kettle 212 containing a perforated oil dispensing plate 220 near the said one end into which oil is fed from a conveyer 276 and a slice separator 277 in countercurrent manner. An intermediate zone of the kettle 212 contains a second oil dispensing device 240 consisting of perforated conduits 244 and a chip agitator 228 consisting of vertically reciprocable bars 230. A perforated plate 246 defines an oil collection zone 248 having an outlet conduit 256. A rake 260 consists of a perforated plate 262 and downwardly extending prongs and is caused to move in a clockwise manner to stir the slices. The end of the kettle 212 has an oil inlet manifold 271 and an oil outlet manifold 275. The inclination of the plate 220 is variable but its inner end is contiguous with the bottom of the kettle 212. OIL CIRCUIT: The oil circuit includes a storage tank 282, a strainer 284, a heater 280, a levelmeasuring device 286 and pumps 402, 414 and 420. OPERATION: Heated oil is fed to the kettle 212 through the inlet manifold 224 and the oil dispersion device 240 while the chips are fed in from the conveyer 276. The chips are stirred by the agitator 228 and the rake 260 before being removed by a conveyer 278. Oil is withdrawn from the intermediate region of the kettle 212 through the outlet manifold 256 and a portion is fed back at a lower temperature through the inlet manifold 271. The remaining portion is combined with oil from the outlet manifold 275 and is fed to the strainer 284 and then reheated by the heater 280 and recycled. The proportion of the oil fed back into the removal end of the kettle 212 depends on the temperature required in that region.
