Abstract

1393846 Dough mixing apparatus BAKER PERKINS PTY Ltd 28 Aug 1973 40416/73 Heading B1C A dough mixer comprises a frame 1 for rotatably supporting a mixing bowl B, a motor driven vertical rotary shaft 6 having a helical beater 8 fixed or forming part of the shaft, a stationary fixed blade 10 being located between the shaft and beater and having edges parallel to the axis of rotation of the shaft and beater and being adapted to sheer dough from the beater as it rotates during a mixing operation. The bowl is rotatably supported on a table 2 and the shaft and beater are driven from a motor contained in the mixer head 3. In the initial stages of preparation the bowl is rotated by driven rollers 14 at the same time as rotation of the mixer shaft, the drive to the rollers being reduced as the stiffness of the dough increases whereby final rotation of the bowl is effected by the rotary action of the dough in the bowl. The axis of rotation of the mixer shaft is positioned approximately at half the radius position of the bowl. The mixer head is pivotable upwards about pin 4 to permit removal of the beater from the bowl. The bowl is also provided with a partial cover 11 with a frusto conical rim portion 13 with an arcuately extending portion 12, the cover facilitates the retention of the dough in the bowl during the early stages of mixing.
