1388774 Preparation of precooked legumes J P BURROUGHS & SON Inc 5 Feb 1973 5546/73 Heading A2E [Also in Division A4] Food, especially raw legumes (e.g. beans), is precooked by passing it from a storage container 10 to a blancher 14 where it is soaked for 20-25 mins at 180-190‹F and then dewatered at 16 and graded at 20. The legumes gain approximately their own weight of water. The soaked legumes are then mixed with water at 190‹F in a ratio of less than 1:1 in a tank 22 and pumped through a cooking pipe 26 by pumps 24, 25 at 1.4 feet per sec. at constant temperature (240‹F) and pressure, controlled by pressure controller 28 which controls either of the pumps 24, 25, and temperature controller 37 which controls the supply of steam to recycled water heater 34. Residence time in the cooking zone is five minutes. On leaving the cooking zone the stream is cooled to 200‹F by recycling water through a cooler 42, the temperature being controlled by controller 45. The legumes are dewatered at 48, cooled to 100‹F, dried at 180‹F and then cooled to 100‹F and packaged.
