Abstract

1379517 Fruit juices D A CONNETT 30 Nov 1971 [30 Nov 1970 30 April 1971] 56901/70 and 12505/71 Heading C6E The calorie content of natural fruit juice e.g. orange, lemon, grapefruit, grape or peach, is reduced by centrifuging the juice to give a liquid serum and gel solids, extracting at least some of the sugar present in the gel solids with water, juice from the same type of fruit but having a lower concentration of sugars, or a component from the fruit juice having a lower concentration of sugars e.g. the liquid serum, and recombining the liquid serum and the sugars-depleted gel solids to give a juice having substantially the same characteristics as the original natural fruit juice but containing less sugar at the same juice strength than the original natural fruit juice. It is postulated that the sugars become concentrated in the gel solids relative to the liquid serum under the action of centrifugal force. Fine solids taken up by the extraction water may be returned to the sugarsdepleted gel solids and liquid serum. The liquid serum may also be treated to remove sugars and can be concentrated to improve the efficiency of sugars removal.
