Abstract

1378043 Freezing bread BRITISH OXYGEN CO Ltd 6 March 1973 [6 March 1972] 10263/72 Heading F4H A loaf of bread is frozen by slicing the loaf, freezing the slices one by one whilst in a horizontal plane and reassembling the slices to reform the loaf. As shown, the loaf 12 is supported in a magazine 10 which is reciprocable on tracks 16 to bring the bottom of the loaf into engagement with a circular slicing blade 24 whereby slices are deposited on a metal mesh conveyer 28 extending through a freezing chamber 30. Liquid nitrogen is introduced into the chamber 30 through a spray header 32 and passes through the chamber past bafflles 34, 36, which direct the flow through the mesh conveyer, to an outlet 38. The frozen slices are collected in a magazine 42 and transferred to a wrapping station.
