1371512 Egg product UNILEVER Ltd 7 Jan 1972 [11 Jan 1971] 1195/71 Heading A2B A cooked keepable egg product consisting essentially of one or more eggs contained in a preferably tubular casing, in which the yolk or yolks exhibit a shape resembling the shape of the yolks in the natural product, may be prepared by filling one or more shelled eggs into a casing, subjecting to 70-100‹C for 30-5 mins, for example by immersing in hot water containing 1-10% sodium chloride or 5-15% of an H 2 S sequestering agent such as an alkali metal phosphate and thereafter cooling. If the casing is gas-permeable, for example cellulose, it may be coated after the heat treatment to render it impermeable at ambient temperature.
