Abstract

1371489 Fructose; enzymatic conversion of glucose STANDARD BRANDS Inc 4 June 1973 26485/73 Heading C2S Glucose in a 5-80 wt. per cent solution, at pH 6-9, with a viscosity of 0À5-100 cps is enzymatically converted to fructose by being passed, at 20-80‹ C., through a bed of bound glucose isomerase having an activity of at least 3 IGIU/c.c. and a stability value of at least 50 hrs. (as defined), at such a flow rate that up to 54% of the glucose is converted, the colour of the product solution is increased by less than 2 colour units (as defined) and the product contains substantially no psicose. The isomerase is suitably bonded to diethylaminoethylcellulose.
