Abstract
1370482 Producing wort MALZFABRIK W SCHROER & SOHN KG 13 Aug 1971 [13 Aug 1970 9 Oct 1970] 38115/71 Heading C6E [Also in Divisions A2 and B1] Liquid malt extracts are obtained by passing a stream of aqueous liquid through germinated and rough-ground cereal grains in a series of towers provided with tangential inlets associated with heaters/coolers, whereby the temperature and density of the liquid may be controlled automatically with the aid of thermocouples and hydrometers through diversion of part of the liquid flow. The aqueous liquid passes sequentially through a washing-out zone (one tower length), a pre-saccharification zone (one to 1¢ tower lengths) and a saccharification and extraction zone (1 to 2 tower lengths), represented in Fig.1 by the towers V to II, during which the temperature of the liquid falls progressively within the range 85‹ to 60‹C and its S.G. increases from 1À00 up to say, 1À15. Light-coloured extracts can be produced by working at relatively low temperatures under sub-atmospheric pressure. Tower I in the Fig. is being emptied of spent grains and recharged. Fig.7 depicts one form of tower having a broadened upper part. The liquid extract, containing 30g solids per 100g of solution, may be boiled and clarified, and freeze-dried to a powdery solid. Caramelized extracts of a light or dark tone can be prepared by adjustment of the temperature.
