Abstract

1350647 Artificial milk BATTELLE MEMORIAL INSTITUTE 16 Nov 1971 [17 Nov 1970] 53241/71 Heading A2B A pulverulent proteinaceous substance containing at least 70wt% acid-precipitated casein and preferably at most 30wt% of at least one vegetable oil seed protein is dissolved in a basic aqueous solution containing alkali metal ions, the quantity and pH of said solution being such that after complete dissolution of the proteinaceous substance there is obtained a solution of pH 5.5-7.3 to which solution there is added sufficient of a mixture of calcium hydroxide and calcium chloride to raise the pH to 7.5-10, and thereafter there is added sufficient aqueous phosphoric acid to bring the pH to 5.6-6.8. The product may be used in cheese manufacture.
