Abstract
1350065 Dessert compositions GENERAL FOODS Ltd 5 May 1971 [6 May 1970] 21950/70 Heading A2B A chiffon-dessert, having a tangy acidic flavour is prepared by whisking with milk or water a first powder mix, comprising a dried emulsion of an edible fat, emulsifying protein, and sweetening agent, to form a whipped composition having stiff peaks; whisking with cold water a second powder mix, comprising a stabilising and setting agent as set forth below and a tangy acidic flavouring, to form a stiff foam, and blending together the whipped composition and the stiff foam. The stabilising and setting agents are selected from pectin, carrageenan, alginates, cellulose, cellulose derivatives, gelatine, starch agar and gums.
