Abstract
1345715 Extracting coffee GENERAL FOODS CORP 16 March 1971 7031/71 Heading A2B In a process of producing soluble coffee comprising passing water through a train of percolators from the percolator with the most exhausted coffe to the percolator with the freshest coffee, collecting coffee extract in batches and drying the coffee extract, during each batch collection two percolators with the most exhausted coffee are withdrawn for discharge and reloading, after each batch collection a pair of percolators with fresh coffee are added to the train, and each batch of coffee extract is collected from the second percolator of each pair of fresh coffee percolators added to the train. Volatile aromatics are stripped from the first percolator of each pair before the pair is added to the train, and are added back to the coffee extract prior to or after drying. Each batch of coffee extract may be collected in two portions. Volatile aromatics may be stripped from the second porton and added to the first portion or a blend of the first portion and a concentrate of the second portion. The portions may be dried separately, e.g. by freeze- or spray-drying, and then blended.
