Abstract

1345168 Protein foods BRITISH SOYA PRODUCTS Ltd 19 April 1971 [16 March 1970] 12535/70 Heading A2B Edible vegetable protein products are obtained by preparing a mixture of comminuted vegetable proteinaceous material, for example sun flower, cotton seed or ground nut flour, or fungal material, or preferably full fat soya flour, water, and a texturing agent, which is free of toxic properties and/or can be completely removed from the product in the course of further processing, for example, cysteine, hydrogen peroxide, ammonium carbonate, bicarbonate, or carbamate, sodium bicarbonate, and azodicarbonamide, which is capable of imparting to the protein a texture which simulates the texture of another protein product, the mixture having the consistency of a fine damp crumb, forming the crumb into a desired shape, and effecting coagulation, for example by cooking. Additional coagulable material may be present such as animal or vegetable proteinaceous material, or non-proteinaceous material such as alginates, pectins, gums, and starch-like substances. Non-coagulable animal or vegetable proteinaceous material may also be present. Additional optional ingredients include fibrous materials, including fibres of carboxymethylcellulose, and plasticising salts or acids. Examples relate to the production of meat-like products.
