Abstract

Textured vegetable protein prods. are made by incorporating a comminuted fibre-contg. material directly into a vegetable protein. Pref. prods. contain 25-99 pts. wt. textured vegetable protein and 1-75 pts. wt. (on dry basis) comminuted fibrous material. The fibrous material may be eg soya shells, corn cobs, rice bran, oat bran, beet pulp, citrous pulp, peanut shells, cellulose flour, wheat germ meal, peanut meal, cane sugar bagasse, etc., or mixts. of these. The prod. pref. contains >=10 wt. % fibres. The prods. have an excellent texture, a reduced calorie content and an increased crude fibre or roughage content, which improves the bowel motions and promotes good health. The prods. are attractive foods which can be used in foods for humans and domestic animals.
