1335099 Production of cheese A SIEGENTHALER 17 Dec 1971 [31 Dec 1970] 58858/71 Heading A2B In a method for the production of cheese, a mixture of curd and whey is filled into an inner tube inclined to the horizontal and permeable to liquid, which tube is closed at its lower end in a liquid-tight manner and is enclosed in a liquid-tight envelope, the curd is compressed by a presser piston introduced into the inner tube, controlled portions of whey being removed from the envelope during the filling and compressing steps. After pressing the cheese may be removed for further processing i.e. cutting and salting. The method may be carried out in the appliance shown in Fig. 1 wherein a curd-whey mixture from cheese producer 1 is passed into inner tubes (shown by dotted lines) of a common envelope 4. Liquid is removed from the envelope by valve means (not shown). After filling, the curd is pressed by pistons actuated by press cylinders 7 and rods 8 (shown on the left in Fig. 1). The pressed cheeses may be cut into loaves 10 and removed by conveyor 12 for further processing.
