Abstract

1318035 Treating green tea TENCO BROOKE BOND Ltd 22 Oct 1970 [27 Oct 1969] 52620/69 Heading A2B A process for the conversion of green tea into a liquor which simulates that obtained from black tea, comprises treating an aqueous extract of the green tea with an enzyme preparation comprising two or more enzymes other than those present in normal tea tissue, and in which the enzymes are in insoluble form. "Green tea" means freshly gathered tea leaf, tea leaf which has been dried before or after withering but without undergoing appreciable fermentation and tea leaf which has been heated before drying to inactivate enzymes therein. The preparation may comprise an enzyme obtained from potato or chicory, tea, bean, sycamore or apple callus tissue or microorganisms e.g. Cladosporium cladosporiodes or Alternaria tenuis, or an enzyme which has been converted into the insoluble form by chemical linkage to an matrix e.g. cellulose. Hydrogen peroxide or oxygen may be added to the extract. The liquor may be dried. The extract may be pumped through a column containing the enzymes.
