Abstract

1310296 Cheese VSESOJUZNY NAUCHNO-ISSLEDOVATELSKY INSTITUT MOLOCHNOI PROMYSHLENNOSTI 7 Nov 1970 53078/70 Heading A2B [Also in Division F4] In an installation for the continuous production of pot cheese coagulum, the coagulator 6 comprises a heat exchanger having a plurality of flattened tubes 8, grouped into separate sections A and disposed within a heating chamber 7. Fermented milk from a tank 1 flows through the tubes and heating medium, namely water, entering through a distributor 10 flows over the tubes. The ratio of the height a to the width b of each tube lies in the range 1:3 to 1:12. The tank 1 is supplied with cold pasteurized milk through a pipe 22 and with protein destablizers such as Rennin, calcium, chloride and lactic acid, and pure culture bacteria through means 2, 3, 4 and 5. The amount of ingredients introduced is controlled automatically from a panel 13: for example, the amount of lactic acid is controlled by the pH of the milk as sensed by devices 14 and 15. A jacket encloses the tank 1 to maintain constant temperature during fermentation. Preceding the chamber 7 is a pressure chamber 12 through which a portion 11 of each tube extends. The chamber forms a flow stabilization section to which cold water is supplied and flows over the tube portions 11. On leaving the coagulator 6, the newly produced coagulum passes through a receiving tank 18, pump 19 and filter 21 to a separator 20 where it is dehydrated.
