Abstract

1307915 Dough proving D C A FOOD INDUSTRIES Inc 20 April 1970 18707/70 Heading A4D [Also in Division H5] A dough-proving apparatus and process comprises exposing a yeast-leavened dough piece to a high frequency electric field and substantially discontinuing this exposure to allow the temperatures in the piece to equalize prior to a second period of exposure. The temperature of the piece is raised by about 10‹F. to between 90 and 120‹F. in a period of less than 3 minutes and the exposure is discontinued for at least 20 seconds after which the dough temperature is raised to between 100‹F. and 130‹F. in the second period. As shown, a generally rectangular chamber 11 is illuminated by an h.f. voltage generator 22, a plurality of rotatable disturbers 24 being within the chamber. An endless conveyer 32 passes through slots 19, 18 and dough pieces P are placed on the conveyer and pass from right to left through a region A where they receive the first exposure, into a region B where they are shielded by a screen tunnel 29 and then pass into a region C for the second exposure. The speed of the conveyer and energy output of the source as well as the length of the tunnel are adjustable.
