Abstract
1,274,864. Agglomerates of potato particles. AMERICAN POTATO CO. 30 April, 1969 [30 April, 1968], No. 20439/68. Headings A2D and A2E. Agglomerates of potato particles which are readily rehydrated without mechanical agitation, into a homogenous mass which can be divided into shapes for french frying, are prepared by forming a mixture of potato particles (e.g. granules or flakes), binder (e.g. guar gum or starch) and, if desired, salt and either (a) mixing the mixture with liquid (e.g. water) to form an agglomerated mass, extruding and dividing the mass into pellets and drying (e.g. fluidised bed drying) the pellets, or (b) spraying a fluidised bed of the mixture with liquid to form agglomerates and drying the agglomerates. The agglomerates have a bulk density of 0.25-0.5 g/ml, a bulk porosity of 0.6 to 0.9 and a water absorption rate of 0.12-0.50 g water/g agglomerates per sec and can be rehydrated within 20 secs to 15 mins e.g. with 1¢-2¢ parts liquid per part agglomerates.
